Blueberry Cream Cheese Muffins

Indulgent blueberry muffins with whole wheat, honey, and luscious cream cheese filling.
Ingredients:
  • 1 cup unbleached all-purpose flour
  • 1.25 cups buttermilk
  • 1 cup white sugar
  • 0.5 cup honey
  • 0.25 cup olive oil
  • 1.5 cups whole wheat flour
  • 1 teaspoon salt
  • 1 tablespoon baking soda
  • 1 cup blueberries
  • 0.5 cup white sugar
  • 1.5 tablespoons unbleached all-purpose flour
  • 0.25 cup sour cream
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C), and prepare a muffin pan by greasing and flouring it or using paper liners.
  • Combine 1 cup unbleached flour and buttermilk in a large bowl; let sit for 5 minutes. Add 1 cup sugar, honey, oil, and egg. In a small bowl, mix whole wheat flour with baking soda and salt. Gently stir this mixture into the white flour mix until just moistened. Carefully fold in the blueberries. Fill muffin cups with one tablespoon of muffin batter, then one tablespoon of filling, and finish with one more tablespoon of batter on top.
  • For the filling: Mix cream cheese, 1/2 cup sugar, 1 1/2 tablespoons flour, egg, sour cream, and vanilla in a medium bowl until smooth.
  • Bake in the oven until a toothpick inserted in the center comes out clean, about 20-25 minutes.
