Indulgent blueberry muffins with a secret touch of sour cream for incredible taste and moistness. A crowd favorite!
Ingredients:
  • 4 large eggs
  • 2 cups white sugar
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups sour cream
  • 2 cups blueberries
Instructions:
  • Preheat the oven to 400°F (200°C) and prepare 24 muffin cups by greasing or lining them with paper liners.
  • In a large bowl, whisk eggs vigorously. Slowly add sugar while whisking continuously. Gradually pour in oil while whisking. Gently fold in vanilla extract.
  • Combine flour, salt, and baking soda in a separate bowl, stirring until mixed.
  • Incorporate dry ingredients into the egg mixture in intervals with sour cream. Carefully mix in blueberries. Fill prepared muffin cups with batter.
  • Bake in the oven until a toothpick inserted in the center comes out clean, roughly 20 minutes.
