Tender blueberry muffins with brown sugar crumb topping, irresistible when warm.
Ingredients:
  • 1.3333333730698 cups all-purpose flour
  • 0.33333334326744 cup white sugar
  • 0.33333334326744 cup brown sugar
  • 2.5 teaspoons baking powder
  • 0.33333334326744 cup vegetable oil
  • 1.5 cups blueberries
  • 0.33333334326744 cup all-purpose flour
  • 0.25 cup butter, softened
  • 1 teaspoon ground cinnamon
Instructions:
  • Preheat your oven to a perfect 375 degrees F (190 degrees C) while you prepare your muffin pan by either greasing it or adding liners.
  • Combine flour, white sugar, brown sugar, salt, and baking powder in a large bowl. Add oil, eggs, and milk, mixing until smooth with minimal lumps. Carefully fold in blueberries to maintain their shape. Fill muffin tins two-thirds full for regular muffins, or slightly more for extra-large muffin tops.
  • Prepare the crumb topping by combining flour, softened butter, cinnamon, and brown sugar until crumbly. Sprinkle a bit over each muffin.
  • Bake muffins in the preheated oven for 20 to 30 minutes, or until a wooden skewer inserted in the center comes out clean.
