Indulgent blueberry muffins with tender texture, sweet bursts of blueberries, and golden domed tops. Unique twist using brown sugar for added tenderness and molasses flavor. Lighter and less oily crumb from rubbing chilled butter into dry ingredients. Perfect for weekend brunch vibes!
Ingredients:
  • 257.50 gm milk
  • 337.50 gm self-raising flour
  • 90g salted butter, chopped
  • 135.00 gm firmly packed brown sugar
  • 125g fresh blueberries
  • 2 eggs, lightly beaten
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced and generously grease a 12-hole muffin pan that holds 1/3 cup each.
  • In a bowl, sift flour. Then, use your fingertips to rub the butter into the flour until it looks like fine breadcrumbs. After that, stir in the sugar.
  • Create a crater in the middle of the flour blend. Incorporate blueberries, milk, and egg. Mix delicately until evenly combined. Fill molds with the batter. Bake for 25 minutes or until an inserted skewer comes out clean. Let sit for 5 minutes in the pan. Remove from pan onto a wire rack to cool. Enjoy!
