Blueberry Gelatin Salad

Delicious vintage recipe using grape gelatin or cherry gelatin with cherry pie filling. Rich flavor, great as a side or dessert, and can be made ahead of time.
Ingredients:
  • 2 (3 ounce) packages grape flavored Jell-O® mix
  • 2 cups boiling water
  • 1 (8 ounce) can crushed pineapple, undrained
  • 1 (21 ounce) can blueberry pie filling
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup sour cream
  • 0.5 cup white sugar
Instructions:
  • Combine gelatin powder, boiling water, pineapple, and pie filling in a large bowl. Transfer the mixture to a mold or glass baking dish, then chill in the refrigerator until firm, for a minimum of 2 hours.
  • Combine cream cheese, sour cream, sugar, and vanilla in a bowl until creamy. Spread over the gelatin. If using a mold, remove gelatin before adding topping.
