Creamy blueberry cheesecake oat bars - a decadent crowd favorite!
Ingredients:
  • 1 cup quick-cooking oats
  • 0.75 cup light brown sugar
  • 0.5 cup all-purpose flour
  • 0.5 cup whole wheat flour
  • 0.5 cup butter
  • 1 (8 ounce) package cream cheese, softened
  • 0.5 cup white sugar
  • 1 egg
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
Instructions:
  • Preheat the oven to 350°F (175°C) and grease a 9-inch square baking dish.
  • Combine oats, brown sugar, all-purpose flour, and whole wheat flour in a bowl. Incorporate butter until mixture looks like coarse crumbs. Press half of the mixture into the baking dish.
  • Bake in the oven until the crust is firm, for approximately 12 minutes. Allow it to cool before serving.
  • Using an electric mixer, blend cream cheese and white sugar until smooth in a bowl. Add egg, lemon juice, lemon zest, and vanilla extract, and mix until smooth. Gently fold in blueberries. Spread the filling over the baked crust and sprinkle remaining oat mixture on top.
  • Bake the bars until they are golden brown, for approximately 30 minutes. Then, cool them in the fridge for 1 to 2 hours.
