Blueberry muffins with a delicious twist of oats and orange juice for added texture and flavor.
Ingredients:
  • 0.5 cup quick cooking oats
  • 0.5 cup orange juice
  • 1.5 cups all-purpose flour
  • 1.25 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon baking soda
  • 0.5 cup vegetable oil
  • 1 cup fresh blueberries
  • 2 teaspoons white sugar
  • 0.25 teaspoon ground cinnamon
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and lightly grease a 12-cup muffin pan. Combine oats and orange juice in a small bowl, then set aside.
  • Combine flour, 1/2 cup sugar, baking powder, salt, and baking soda in a medium bowl. Add oil and egg, mix well. Stir in oats and gently fold in blueberries. Spoon batter into muffin cups.
  • Combine 2 teaspoons of sugar and cinnamon in a small bowl, then generously sprinkle the mixture over the muffin tops.
  • Bake until a knife inserted in the center of a muffin comes out clean, approximately 18 to 20 minutes in a preheated oven.
