Light and tasty oat bran muffins with customizable fruit options like blueberries, strawberries, or peaches. Serve with fresh strawberries for a delightful treat!
Ingredients:
  • 1.5 cups oat bran
  • 1.5 cups all-purpose flour
  • 0.5 cup packed brown sugar
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 1.125 cups applesauce
  • 0.5 cup egg substitute
  • 2 tablespoons canola oil
  • 1 teaspoon vanilla extract
  • 1.5 cups blueberries
  • 0.25 cup chopped pecans
  • 0.5 cup low fat granola
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C). Place paper liners in a 12 cup muffin pan and give them a quick spray of cooking spray.
  • Combine oat bran, flour, brown sugar, baking soda, baking powder, cinnamon, and salt in a large bowl. In a separate bowl, mix applesauce, egg substitute, canola oil, and vanilla extract. Combine the applesauce mixture with the flour mixture. Gently fold in blueberries and pecans. Divide batter into muffin cups, top with granola, and press lightly to adhere.
  • Bake in the preheated oven for 18 minutes or until a toothpick inserted into a muffin comes out clean. Allow to cool on a wire rack.
