Saskatoon berry oat muffins: Sweet, slightly tart, perfect for breakfast or a snack. A twist on classic blueberry muffins.
Ingredients:
  • 0.75 cup rolled oats
  • 0.75 cup milk
  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup vegetable oil
  • 1 egg, beaten
  • 1 cup frozen saskatoon berries
  • 1 tablespoon brown sugar
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a 12-cup muffin pan.
  • Combine oats and milk in a small bowl, stirring until well mixed; let it sit.
  • In a large bowl, combine flour, white sugar, baking powder, baking soda, and salt. In a separate bowl, whisk together oil and beaten egg. Gently fold the egg mixture into the flour mixture until just combined.
  • Combine oat mixture with batter, gently fold in saskatoon berries, distribute the batter evenly among muffin cups, and sprinkle with brown sugar before baking.
  • Bake in the preheated oven for around 18 minutes or until a toothpick comes out clean when inserted into the center of a muffin. Allow to cool in the pan for 10 minutes before serving warm or transferring to a wire rack to cool completely.
