Saskatoon Berry Pie Filling

Versatile berry pie filling for 4 pies or as a luscious topping for cheesecake or pound cake.
Ingredients:
  • 4 cups water
  • 0.75 cup lemon juice
  • 12 cups fresh serviceberries
  • 3 cups white sugar
  • 1 cup cornstarch
Instructions:
  • In a large pot, bring water and lemon juice to a boil, then add berries and bring to a boil again.
  • Combine the sugar and cornstarch in a bowl, whisking them together until well blended. Stir the sugar mixture into the berries and cook the mixture, stirring constantly, until the sauce becomes clear, which usually takes about 3 minutes.
  • Prepare jars and lids by boiling in water for 5 minutes. Fill hot jars with pie filling, leaving 1/4 inch space at the top. Remove air bubbles by running a knife or thin spatula around the inside of the jars. Clean jar rims with a damp paper towel. Seal with lids and rings.
  • Fill a large stockpot halfway with water and bring it to a boil. Use a holder to carefully lower the jars onto a rack at the bottom, leaving a 2-inch space between them. Pour in extra boiling water to ensure the jars are covered by at least 1 inch of water. Cover the pot, let the water reach a rolling boil, and process for 10 minutes.
  • Place the jars on a cloth-covered or wooden surface, a few inches apart, until they cool. Press the top of each lid with a finger to ensure a tight seal (lid does not move). Store in a cool, dark area.
