Saskatoon berries, a delicious twist on blueberries, add a wild and subtle flavor to any pie recipe.
Ingredients:
  • 0.5 cup lard
  • 0.75 cup cold water, divided
  • 4 cups saskatoon berries, or as needed
  • 0.75 cup white sugar
  • 1.5 tablespoons all-purpose flour
  • 1.5 tablespoons cornstarch
  • 2 teaspoons lemon juice
  • 1 tablespoon butter, cut into small pieces
Instructions:
  • To make the pastry, combine flour and salt in a large bowl. Use a knife or pastry blender to cut in the lard until the mixture looks like peas. Drizzle 1/4 cup of cold water over the mixture one tablespoon at a time, using a fork to combine until the dough can be formed into a ball when squeezed. Split the dough into two balls, shape them, and refrigerate for about 1 hour until cold.
  • In a saucepan, combine berries and 1/2 cup water. Bring to a boil, then simmer until berries are tender, about 10 minutes.
  • Combine sugar, flour, and cornstarch in a small bowl. Mix the sugar mixture into the berries, bring to a boil, and cook while stirring until the filling is transparent, approximately 2 minutes. Add lemon juice and allow the filling to cool to room temperature, around 30 minutes.
  • Preheat the oven to a toasty 425°F (220°C).
  • Roll out the pastry on a floured surface to fit the 8-inch pie plate. Line the pie plate with the crust. Pour the berry mixture into the pie crust and dot with butter. Roll out the remaining pastry for the top crust, place it over the filled pie, then crimp the edges tightly together.
  • Bake in the preheated oven at 375 degrees F for 15 minutes, then lower the temperature to 350 degrees F and bake for an additional 35 minutes, until the crust is golden brown and the filling is bubbly.
