Light and refreshing "mocktail", ideal for non-drinkers and those watching their waistlines, perfect for holiday gatherings.
Ingredients:
  • 1 pint blueberries
  • 0.25 cup sugar
  • 1 tablespoon grated fresh ginger
  • 0.25 cup crushed ice
  • 2 tablespoons orange juice
  • 0.25 cup club soda
  • 1 slice orange
Instructions:
  • In a saucepan over medium-high heat, combine blueberries, water, sugar, and ginger. Bring to a boil, then simmer for 5 minutes, gently mashing the blueberries. Let the mixture cool for 10 minutes. Strain through a food mill or fine mesh sieve to remove blueberry skins. Reserve 1/4 cup syrup and refrigerate the rest for up to 1 week.
  • Fill a glass with crushed ice. Pour in the blueberry-ginger syrup and orange juice. Finish with club soda and stir gently. Garnish with an orange slice.
