Blueberry-Lemon Bars

Delicious blueberry lemon bars made with Gold Medal® flour for a perfect sweet and tangy treat.
Ingredients:
  • 1/2 cup granulated sugar
  • 1 tablespoon grated lemon peel
  • 1 cup butter or margarine, softened
  • 3/4 cup blueberry preserves
  • 2 teaspoons grated lemon peel
  • 1/2 cup powdered sugar
  • 2 to 3 teaspoons lemon juice
Instructions:
  • Preheat oven to 350°F. Combine flour, granulated sugar, and 1 tablespoon lemon peel in a large bowl. Use a pastry blender or two knives to cut in the butter until the mixture resembles coarse crumbs. Press the mixture into an ungreased 13x9x2-inch rectangular pan.
  • Bake until edges are a beautiful light golden brown, for about 25 to 30 minutes.
  • In a small bowl, combine preserves and 2 teaspoons of lemon peel. Spread this mixture over the hot crust and bake for an additional 5 minutes. Allow the dish to cool completely for about 1 hour before serving.
  • Combine powdered sugar and lemon juice in a small bowl until the mixture is smooth and can be drizzled. Drizzle the glaze over the cut bars. Cut the bars into 6 rows by 6 rows.
