Indulge in a zesty blueberry and lemon coffee cake for a delicious anytime treat.
Ingredients:
  • 1 egg
  • 2 cups Original Bisquick™ mix
  • 1/3 cup granulated sugar
  • 2/3 cup milk
  • 1 tablespoon grated lemon peel
  • 1 cup fresh or frozen (thawed) blueberries, rinsed, well drained
  • 1/4 cup Original Bisquick™ mix
  • 2/3 cup powdered sugar
  • 3 to 4 teaspoons lemon juice
Instructions:
  • Preheat the oven to 400°F and grease a 9-inch round cake pan. In a medium bowl, lightly beat the egg. Mix in 2 cups of Bisquick mix, granulated sugar, milk, and lemon peel until well combined.
  • Toss blueberries with 1/4 cup Bisquick mix in a small bowl. Gently fold into batter and spread in pan.
  • Bake until beautifully golden brown, for about 20-25 minutes. Allow to cool for 10 minutes before serving.
  • Combine powdered sugar and fresh lemon juice in a small bowl until you achieve a smooth glaze. Drizzle the glaze over the coffee cake and enjoy it warm.
