Wholesome banana bread made with whole wheat flour and creamy yogurt.
Ingredients:
  • 0.75 cup whole wheat flour
  • 0.75 cup all-purpose flour
  • 0.5 teaspoon kosher salt, or to taste
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.5 cup butter, softened
  • 3 ripe bananas
  • 0.25 cup plain yogurt
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C). Grease up a 9x5-inch loaf pan. In a bowl, mix whole wheat flour, all-purpose flour, baking soda, kosher salt, cinnamon, and nutmeg.
  • Cream together the butter and sugar until smooth in a mixing bowl, then blend in the egg and vanilla extract using an electric beater. In another bowl, combine the mashed bananas and yogurt until creamy. Gradually mix the flour into the butter mixture, alternating with the banana mixture until the batter is silky. Transfer the batter into the loaf pan.
  • Bake the banana bread in the preheated oven for 50 to 60 minutes or until a toothpick inserted into the center comes out clean. Allow it to cool in the pan for 10 minutes, then transfer to a cooling rack to finish cooling.
