Indulge in homemade boba tea for a customizable and budget-friendly twist on this popular drink.
Ingredients:
  • For the tapioca pearls
  • 3 1/2 cups water
  • 1 cup dried tapioca pearls For the tea
  • 8 bags of black tea, like Ceylon, Assam, or English Breakfast
  • 4 cups boiling water
  • 1/2 cup milk, whole or non-dairy, plus more to taste
  • Ice For the brown sugar simple syrup
  • 1/2 cup brown sugar
  • 1/2 cup water
Instructions:
  • Prepare the tapioca pearls: Bring water to a rolling boil in a medium saucepan. Add the dried tapioca pearls carefully and stir gently to prevent sticking. Let them gently boil for 15 minutes until they change color. Test one for doneness and continue cooking if needed. Once ready, let them sit covered in the pan for 20 minutes to an hour. Follow package instructions for quick-cook tapioca.
  • Brew the tea: Boil water, add black tea bags, steep for 5 minutes while the tapioca pearls cook.
  • Prepare the simple syrup: In a small saucepan, mix the sugar and water. Heat over medium heat, stirring until the sugar dissolves completely. Let cool before using.
  • To put together the boba tea: After preparing the tapioca pearls, transfer them from the hot water into 4 glasses using a slotted spoon. Pour 1 cup of tea and 2 to 3 tablespoons of milk into each glass. Sweeten with 1 to 2 tablespoons of simple syrup to your liking and add ice on top.
