Traditional recipe from Northern Ireland handed down through generations - best served next day for maximum flavor!
Ingredients:
  • 1 cup water
  • 4 cups candied mixed fruit
  • 0.75 cup butter
  • 2 cups all-purpose flour
  • 1 teaspoon mixed spice
  • 2 eggs, beaten
Instructions:
  • Preheat the oven to 300°F (150°C) while preparing a 9x5 inch loaf pan by greasing and lining it with parchment paper or aluminum foil.
  • In a saucepan over medium heat, simmer water with mixed fruit, sugar, and butter until it boils gently for 10 minutes. In a large bowl, sift together flour, baking soda, and mixed spice. Pour in the boiled mixture and blend well. Add eggs, mix, and pour into a greased loaf pan.
  • Bake in the preheated oven for 90 minutes, or until a skewer comes out clean when inserted into the top. Allow the cake to cool in the pan for at least 10 minutes before removing.
