Pineapple boiled fruit cake

Enhance your fruit cake with crushed pineapple for added sweetness and moisture.
Ingredients:
  • 440g can crushed pineapple in juice, undrained
  • 500g mixed dried fruit
  • 20.00 ml sherry
  • 180.00 gm brown sugar
  • 125g butter, chopped
  • 2 eggs, beaten lightly
  • 2.50 gm mixed spice
  • 2.50 gm bicarbonate of soda
Instructions:
  • Prepare a 20cm round cake pan by greasing and lining it with parchment paper, ensuring the paper extends 5cm above the sides. Preheat your oven to 180C.
  • In a medium saucepan, mix together pineapple, assorted fruits, vanilla, sherry, sugar, and butter. Stir over medium heat until the butter is melted and the sugar dissolves. Bring to a boil, then simmer uncovered for 5 minutes. Allow the mixture to cool.
  • Combine eggs with the fruit mixture, followed by the sifted dry ingredients. Transfer the mixture into the pan. Bake for 1 1/2 hours or until cooked through. Allow it to stand for 10 minutes before flipping it onto a wire rack to cool.
