Tilapia Salad with Strawberry-Pineapple Salsa

Try a refreshing salad with broiled mild fish for a delightful change.
Ingredients:
  • 1 can (8 oz) crushed pineapple in juice, drained, juice reserved
  • 2 cups fresh strawberries, stems removed, halved
  • 1/2 cup diced cucumber
  • 1/4 cup chopped fresh mint leaves
  • 2 tablespoons tarragon or wine vinegar
  • 2 medium green onions, thinly sliced (2 tablespoons)
  • 4 tilapia or other mild-flavored fish fillets (5 oz each)
  • Cooking spray
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon smoked paprika, if desired
  • 4 cups loosely packed fresh spinach
Instructions:
  • Reserve 2 tablespoons of pineapple juice. Combine the pineapple and the rest of the juice with the other salsa ingredients in a small bowl.
  • Preheat oven to broil. Arrange fish on a broiler pan and coat the tops with cooking spray. Drizzle 2 tablespoons of reserved pineapple juice over the fish, then sprinkle with seasoned salt and smoked paprika. Broil 4 to 6 inches from the heat for 6 to 8 minutes until the fish flakes easily with a fork.
  • On 4 plates, neatly layer 1 cup of fresh spinach. Top with broiled fish and generously spoon salsa over both fish and spinach.
