Cuban-Style Tilapia Salad

Whip up a nutrient-packed fish salad for a quick and delicious dinner option in just 30 minutes.
Ingredients:
  • 1/2 cup pineapple juice
  • 1 teaspoon grated lime peel
  • 2 tablespoons lime juice
  • 1 tablespoon canola oil
  • 1/4 teaspoon seasoned salt
  • 4 tilapia or other mild-flavored fish fillets (about 5 oz each)
  • Cooking spray
  • 1/2 teaspoon seasoned salt
  • 4 cups mixed salad greens
  • 2 cups fresh or canned (drained) pineapple chunks
  • 1/4 cup fresh mint leaves
Instructions:
  • In a 1-cup glass measuring cup, whisk together all dressing ingredients until smooth.
  • Preheat the oven on broil setting. Arrange the fish on a broiler pan rack and coat the tops with cooking spray. Drizzle 2 tablespoons of lime juice and sprinkle with seasoned salt. Broil the fish 4 to 6 inches from the heat source for 6 to 8 minutes until easily flaked with a fork.
  • On 4 plates, create a bed of 1 cup salad greens. Distribute pineapple evenly among plates. Position fish on or beside the greens. Garnish both the greens and fish with fresh mint. Serve with the dressing on the side.
