Gluten-Free Cuban Style Tilapia Salad

Whip up a quick and healthy fish salad for dinner in just 30 minutes!
Ingredients:
  • 1/2 cup pineapple juice
  • 1 teaspoon grated lime peel
  • 2 tablespoons lime juice
  • 1 tablespoon canola oil
  • 1/4 teaspoon seasoned salt
  • 4 tilapia or other mild-flavored fish fillets (about 5 oz each)
  • Cooking spray
  • 1/2 teaspoon gluten-free seasoned salt
  • 4 cups mixed salad greens
  • 2 cups fresh or canned (drained) pineapple chunks
  • 1/4 cup fresh mint leaves
Instructions:
  • Beat all dressing ingredients together in a 1-cup glass measuring cup using a wire whisk.
  • Preheat broiler. Place fish on a rack in a broiler pan and coat the tops with cooking spray. Drizzle 2 tablespoons of lime juice over the fish, then season with seasoned salt. Broil the fish 4 to 6 inches from the heat for 6 to 8 minutes, until it flakes easily with a fork.
  • On 4 plates, elegantly distribute 1 cup of vibrant salad greens. Divide the sweet pineapple evenly among the plates. Gently place the fish on or beside the greens. Delicately sprinkle fresh mint on top of the greens and fish. Serve with a generous drizzle of dressing.
