"Southern-style boiled peanuts: salty, addictive snack made with raw peanuts simmered in briny water for easy shell removal."
Ingredients:
  • 1 pound of raw "green" peanuts (not the color green, but fresh raw peanuts which are called green peanuts)
  • 1/4 cup kosher salt (or 2 Tbsp table salt)
  • Optional seasoning
  • 2 tablespoons Old Bay Seasoning, smoked paprika, shrimp boil mix, or even star anise
Instructions:
  • Give the peanuts a good rinse under cold water.
  • In a large stockpot, combine water, salt, seasoning, and peanuts. Bring to a boil, then cover and simmer gently for 2 to 3 hours or longer, until peanuts are softened to your liking.
