Simple and flavorful boiled red potatoes with butter and chives, perfect side dish for any meal.
Ingredients:
  • 2 pounds very small red potatoes, scrubbed
  • 3 tablespoons unsalted butter, softened
  • 3 tablespoons finely chopped fresh chives
  • salt and ground black pepper to taste
Instructions:
  • Prepare all ingredients.
  • In a large pot, immerse potatoes in salted water and bring to a boil. Let simmer on medium-low heat until tender for about 10 to 15 minutes. Drain and allow to cool slightly before handling for 1 to 2 minutes.
  • Slice the potatoes in half and arrange them in a decorative serving bowl.
  • Combine the butter, chives, salt, and pepper with the potatoes until the butter is melted and the potatoes are thoroughly coated.
