Boiled potatoes with herbed olive oil dressing

Elevate boiled potatoes with zesty herb and chili dressing from MasterChef contestant Billy Law.
Ingredients:
  • 650g chat potatoes, rinsed
  • 125ml olive oil
  • 20.00 ml chopped rosemary leaves
  • 20.00 ml chopped mint leaves
  • 62.50 ml chopped flat-leaf parsley
  • 62.50 ml chopped basil leaves
  • 1 tsp chilli flakes
  • 5 anchovies, roughly chopped
  • 2 tsp baby capers
Instructions:
  • Boil potatoes in a generously salted large saucepan for 15 minutes, or until tender. In a large bowl, mix herbs, chili flakes, anchovies, and capers together. Stir in olive oil until well combined.
  • After draining the potatoes, allow them to cool briefly. Halve the potatoes, then transfer them to a sizable serving bowl. Drizzle the olive oil dressing over the potatoes and toss them delicately to mix. Finally, season with salt and black pepper.
