Bologna Sliders with Fried Onions

Midwestern comfort: Fried bologna sliders with onions, great for snacking or game day with a cold brew.
Ingredients:
  • 8 slider rolls
  • 8 teaspoons yellow mustard
  • 8 dill pickle slices, or more to taste
  • 2 teaspoons olive oil
  • 1 large onion, halved and thinly sliced
  • 4 (1/4-inch-thick) slices deli bologna, quartered
Instructions:
  • Slice the slider rolls in half horizontally, then generously spread 1 teaspoon of zesty mustard on the bottom of each roll. Add a crisp pickle slice on top and set aside for tantalizing flavors to meld together.
  • In a large skillet over medium heat, warm 2 teaspoons of olive oil. Add sliced onions and cook for 1 minute before adding the bologna wedges. Continue cooking until the onions are tender and translucent, and the bologna is golden brown on both sides, stirring and flipping occasionally, for 3 to 4 minutes.
  • Place 2 bologna wedges on each bottom bun, sprinkle with fried onions, cover with the top buns, and serve while warm.
