Fried Bologna Bánh Mì Bites

Delicious fried bologna bánh mì bites: baguette slices topped with spicy sauce, crispy bologna, pickled carrot and radish, jalapeno, cilantro, and Sriracha. Perfect one-bite contrast!
Ingredients:
  • 1/3 cup mayonnaise
  • 2 teaspoons hoisin sauce, or to taste
  • 1 teaspoon sriracha hot sauce, plus more as needed
  • 1/2 cup julienne (matchstick-cut) or shredded carrot
  • 1/2 cup julienne (matchstick-cut) or shredded daikon radish
  • 2 tablespoons seasoned rice vinegar
  • 1/4 cup julienne (matchstick-cut) English cucumber
  • 2 jalapeno peppers, thinly sliced, and seeded if desired
  • 1/2 cup fresh cilantro leaves
  • 1 loaf baguette bread, sliced into 1/4-inch rounds
  • 6 slices bologna, quartered
  • 1 tablespoon melted butter
Instructions:
  • Combine mayonnaise, hoisin sauce, and hot sauce in a small bowl, and set aside for assembling the bites later.
  • Combine the carrots and radish in a bowl, then drizzle with the seasoned rice vinegar. Let it marinate on the counter for approximately 15 minutes, giving it a toss from time to time.
  • Garnish with sliced cucumber, jalapeno, and cilantro. Spread each baguette slice with a generous teaspoon of hoisin mayonnaise and arrange them beautifully on a serving platter.
  • In a nonstick pan over medium-high heat, melt butter, and fry bologna in a single layer until edges become browned and crisp, turning occasionally for 2 to 3 minutes. Brown in batches if necessary, adjusting the heat as needed.
  • Lay a crispy bologna slice over each baguette slice, layer with cucumbers, marinated carrot, and radish. Top with jalapeno rings, a hint of hot sauce, and fresh cilantro leaves to complete.
