Bologna, onion, mashed potatoes, and melted Cheddar come together in a delicious and comforting bake.
Ingredients:
  • 8 slices bologna
  • 3 tablespoons butter
  • 1 onion, chopped
  • 4 cups warm mashed potatoes
  • 1.5 cups shredded Cheddar cheese
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and butter a 1 1/2-quart baking dish.
  • 1. Preheat a skillet over medium-high heat. Cook bologna slices until golden brown on both sides, around 1 minute each. Place on a paper towel-lined plate. Remove excess grease from the skillet, lower heat to medium, add butter and onion. Sauté until onion is soft and translucent, approximately 5 minutes. Fold into the warm mashed potatoes and enjoy!
  • Begin by dolloping a generous layer of creamy mashed potatoes into the ready baking dish. Follow it up by arranging savory fried bologna slices on top, then sprinkle a rich blanket of cheese. Repeat this delicious layering process with the rest of the ingredients for a mouthwatering dish.
