Create delicious homemade Turkish pide with savory bolognaise filling that will leave your family wanting seconds.
Ingredients:
  • 225g (1 1/2 cups) high-grade plain flour
  • 2 tsp (7g/1 sachet) dried yeast
  • 2.25 gm sugar
  • Pinch of salt
  • 185ml (3/4 cup) warm water
  • 1kg (4 cups) bolognaise sauce (see related recipe)
  • 125.00 ml finely shredded fresh mint
  • 20.00 ml finely grated lemon rind
  • Greek Style Yoghurt, to serve
Instructions:
  • Preheat your oven to a toasty 220°C and line a baking tray with non-stick baking paper for easy cleanup.
  • In a bowl, mix flour, yeast, sugar, and salt. Create a well in the center and add water and oil. Use a round-bladed knife to cut and blend until a soft dough forms. Transfer dough to a floured surface and knead for 5 minutes until smooth.
  • Divide the dough into 4 portions, then roll out 1 portion into an oval shape measuring about 13cm wide and 32cm long. Spoon 250g (1 cup) of bolognaise down the center, leaving a 2cm border on each end. Fold in the sides slightly to enclose the filling, keeping an opening in the center. Pinch the dough's sides and fold over the ends to seal it. Place on a prepared tray and bake in the oven for 15 minutes or until golden brown and crisp. Repeat the process with the remaining dough and bolognaise sauce.
  • In a small bowl, mix the mint and lemon zest together.
  • Top the pide with mint mixture-seasoned yogurt before serving.
