Cheesy, meat-filled stuffed potatoes - the ultimate comfort food.
Ingredients:
  • 1kg potato
  • 1 quantity lasagne mince mixture (see related recipe)
  • 250.00 ml Roasted carrot (see related recipe), chopped
  • 125.00 ml frozen peas
  • Grated parmesan cheese, to serve
Instructions:
  • Preheat oven to 200°C/180°C fan-forced. Wash and dry potatoes. Make holes all over with a fork, wrap each in foil, and bake on a tray for 1 hour 20 minutes or until tender. Rest for 10 minutes before serving.
  • In a saucepan over medium-high heat, cook the mince mixture and carrot until boiling. If needed, add 1/4 cup cold water. Reduce heat to medium-low and simmer for 10 minutes until heated. Stir in peas and simmer for 5 more minutes until tender. Season with salt and pepper to taste.
  • Gently unwrap potatoes from foil and score a small cross on the top of each one. Use a tea towel to hold each potato and gently press the base to open the top. Place the potatoes on plates and top with the mince mixture and parmesan before serving.
