Bolognese Stuffed Bell Peppers

Savory Italian meat and tomato rice stuffing baked in sweet bell peppers.
Ingredients:
  • 0.5 cup cooked rice
  • 2 tablespoons olive oil, divided
  • 0.125 cup minced carrots
  • 0.125 cup celery
  • 6 bell peppers (any color) stems and seeds removed, cut in half lengthwise
  • 0.5 pound ground beef
  • 0.25 pound pancetta or lightly smoked bacon, diced
  • 1.5 cups prepared marinara sauce
  • 0.25 cup red wine
  • 0.5 teaspoon red pepper flakes
  • 0.33333334326744 cup heavy cream
  • 0.5 cup grated Parmesan cheese, divided
Instructions:
  • Preheat the oven to 375°F (190°C) for the perfect cooking environment.
  • In a skillet over medium heat, warm up 1 tablespoon of olive oil. Add the carrots and celery and sauté until tender, about 5 minutes.
  • Combine ground beef and pancetta, cooking until browned and crumbled. Drain any excess liquid and return to heat. Mix in marinara sauce, wine, and red pepper flakes, then simmer for 10 minutes. Stir in cream, half of the Parmesan cheese, and rice. Continue to simmer for an additional 5 minutes or until most liquid has been absorbed.
  • In a shallow baking dish, fill the peppers with the savory beef mixture. Drizzle with the rest of the olive oil and sprinkle with the remaining Parmesan cheese.
  • Place in the oven without covering for 30 minutes until hot. Serve while still fresh.
