Indulgent Boston cream pie: moist yellow cake filled with rich custard, finished with decadent chocolate icing. A timeless, elegant dessert.
Ingredients:
  • 1.25 cups all-purpose flour
  • 1 cup white sugar
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.75 cup milk
  • 0.33333334326744 cup shortening
  • 1 egg
  • 1 teaspoon vanilla extract
  • 0.33333334326744 cup white sugar
  • 2 tablespoons cornstarch
  • 0.125 teaspoon salt
  • 1.5 cups milk
  • 2 egg yolks
  • 2 teaspoons vanilla extract
  • 2 (1 ounce) squares unsweetened chocolate
  • 3 tablespoons butter
  • 1 cup confectioners' sugar
  • 0.75 teaspoon vanilla extract
  • 2 tablespoons hot water, or as needed
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C), then generously grease and flour a 9-inch round cake pan.
  • Prepare delicious cake batter by blending flour, sugar, baking powder, salt, milk, shortening, egg, and vanilla at low speed, scraping the bowl constantly for 30 seconds. Then, increase speed to high and continue to mix, scraping the bowl occasionally for 3 minutes. Transfer the batter into the prepared pan.
  • Place in the oven that's been preheated, and bake for 30 to 35 minutes, or until a wooden pick inserted near the center comes out clean. Then, take it out of the pan and allow it to cool on a wire rack.
  • For the cream filling, combine sugar, cornstarch, and salt in a 2-quart saucepan. Gradually whisk in milk and cook over medium heat until thickened and boiling. Boil and stir for 1 minute. Slowly whisk half of the mixture into egg yolks. Pour back into the saucepan and boil for another minute. Remove from heat, stir in 2 teaspoons vanilla, and cool to room temperature.
  • Prepare the chocolate glaze by melting chocolate and butter together over low heat. Take the mixture off the heat and blend in the confectioners' sugar and vanilla. Adjust the glaze thickness by stirring in water, one teaspoon at a time, until it reaches the desired consistency.
  • To construct the cake, gently divide the cooled cake to create 2 delicate layers. Fill each layer generously with the filling, followed by spreading the luscious chocolate glaze over the top. Refrigerate any uneaten cake for later enjoyment.
