Bourbon chocolate cake

Indulge in a decadent bourbon-infused cake for a cozy winter night.
Ingredients:
  • Melted butter, to grease
  • 200g pkt dark cooking chocolate, coarsely chopped
  • 125g unsalted butter
  • 5 eggs, separated
  • 120g (2/3 cup, lightly packed) brown sugar
  • 8.80 gm vanilla essence
  • 125g almond meal
  • 180ml (2/3 cup) bourbon whiskey
  • 100g (1/2 cup) caster sugar
  • 45g butter
  • 185ml (3/4 cup) thickened cream
  • 100g dark cooking chocolate, extra, coarsely chopped
Instructions:
  • Preheat your oven to 180C. Coat a 23cm springform pan with melted butter and line the base with non-stick baking paper.
  • Melt the chocolate and unsalted butter in a heatproof bowl over a saucepan of simmering water, stirring until smooth. Allow to cool.
  • In a large bowl, use an electric beater to whip egg yolks and brown sugar until thick and creamy, about 3 minutes. Mix in the vanilla. Gently mix in the chocolate mixture, almond meal, and 1 tablespoon of bourbon. In a separate bowl, beat egg whites until soft peaks form. Fold one-third of the egg whites into the chocolate mixture, then fold in the rest.
  • Spread the mixture evenly in the prepared pan and bake for 45-55 minutes until a skewer inserted into the center comes out almost clean. Allow it to cool in the pan before serving.
  • In a saucepan over medium heat, swirl caster sugar until golden and fully dissolved, for about 5-10 minutes. Allow to cool slightly before using.
  • Combine butter, cream, and the remaining bourbon in a saucepan. Gently cook over low heat until the mixture is smooth. Remove from heat and stir in the extra chocolate until smooth. Allow the mixture to cool slightly.
  • Slice the cake into wedges and drizzle with the sauce before serving.
