Treat yourself with a celebratory cake, perfect for any day!
Ingredients:
  • 2 cups Gold Medal™ all-purpose flour
  • 2 cups granulated sugar
  • 1/2 cup butter or margarine, softened
  • 3/4 cup buttermilk
  • 1/2 cup water
  • 1/4 cup bourbon or water
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking powder
  • 2 eggs
  • 4 oz unsweetened baking chocolate, melted, cooled
  • 1 cup chopped pecans
  • 1 oz unsweetened baking chocolate
  • 1 teaspoon butter or margarine
  • 1 cup powdered sugar
  • 5 to 6 teaspoons boiling water
Instructions:
  • Preheat oven to 350°F and generously grease and flour a 10-inch angel food cake (tube) pan or 12-cup fluted tube cake pan.
  • In a large bowl, use an electric mixer to blend all Cake ingredients (except for pecans) on low speed for 30 seconds, scraping the bowl as needed. Increase speed to high and beat for 3 minutes, occasionally scraping the bowl. Gently fold in the pecans before pouring the batter into the pan.
  • Bake for 60-65 minutes until a toothpick inserted in the center comes out clean. Let it cool for 10 minutes, then remove from the pan onto a wire rack. Allow it to cool completely for about 1 hour.
  • In a 2-quart saucepan, gently melt 1 ounce of chocolate and 1 teaspoon of butter over low heat, stirring occasionally. Mix in powdered sugar and water until it's smooth and thin. Drizzle the cooled cake with the chocolate glaze.
