Bourbon Vanilla Crème Brûlée

Indulge in a decadent bourbon vanilla crème brûlée for a rich and intense vanilla experience.
Ingredients:
  • 3 large egg yolks
  • 0.25 cup superfine sugar
  • 1 teaspoon pure bourbon vanilla bean paste
  • 1 cup heavy whipping cream
  • 1 tablespoon superfine sugar
Instructions:
  • In a bowl, whisk egg yolks with an electric mixer on high speed for about 5 minutes until thick and pale yellow. Slowly mix in 1/4 cup sugar and vanilla bean paste.
  • Gently heat cream in a double boiler until just hot to the touch, about 3 minutes. Gradually whisk half of the warm cream into the egg mixture, ensuring a smooth consistency without curdling.
  • Combine the egg yolk-cream mixture with the remaining cream in the double boiler.
  • Stir constantly over medium heat until mixture thickens, about 8 to 10 minutes. Avoid boiling the mixture.
  • Divide the custard evenly among 4 small ramekins and chill in the refrigerator for at least 2 hours, but ideally up to 24 hours.
  • Top off each luscious crème brûlée with a dusting of the remaining tablespoon of delicate superfine sugar.
  • Caramelize the sugar on top of the crème brûlée using a blowtorch until it crystallizes and hardens. Be cautious not to burn the sugar if using the oven broiler as an alternative method.
  • Gently crush the crystallized sugar with the back of a spoon before enjoying.
