Try these irresistible Boursin stuffed mushrooms for a simple and delicious appetizer that will impress any crowd.
Ingredients:
  • 1 (5.2 ounce) package garlic and herb cheese spread (such as Boursin®)
  • 1 (8 ounce) package cream cheese, softened
  • 1 (8 ounce) package grated Parmesan cheese, divided
  • 1 cup olive oil
  • 20 mushrooms, stems removed
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C). Mix cheese spread, cream cheese, and 1/2 package of Parmesan cheese in a bowl until smooth; then cover and chill in the refrigerator.
  • Drizzle olive oil in a bowl. Coat each mushroom completely in the oil. Arrange mushrooms gill-side down on a parchment-lined baking sheet. Top with another sheet of parchment paper.
  • Bake the mushrooms in the preheated oven for about 12 minutes until tender. Allow them to cool slightly. Line the baking sheet with fresh parchment paper and generously stuff each mushroom cap with the cheese mixture, then place them on the baking sheet.
  • Place the baking sheet back in the oven and bake for another 12 minutes until the cheese is melted. Sprinkle with the remaining half package of Parmesan cheese just before serving.
