Indulge in decadent boursin chicken soup for a cozy family meal.
Ingredients:
  • 1 Tablespoon unsalted butter
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 2 cups chicken broth
  • 1 1/2 cups frozen mixed vegetables
  • 1 1/2 cups frozen diced hash brown potatoes
  • Salt and pepper to taste
  • 2 cups diced cooked chicken
  • 1 (5.2-ounce) package Gournay cheese with fine herbs and garlic
  • 1 cup heavy cream
  • 1 cup chopped fresh spinach
  • Fresh parsley for optional garnish
Instructions:
  • In a roomy saucepan or Dutch oven, melt butter over medium heat. Sauté onion and celery, stirring occasionally, for 2 to 3 minutes. Stir in garlic and cook until aromatic, around 30 seconds to 1 minute.
  • Add the chicken broth and bring it to a boil.
  • Add a generous portion of colorful frozen mixed vegetables into the pot and watch as they dance in the bubbling broth. Allow them to mingle for about 3 minutes, then gently fold in the crispy hash browns. Finally, sprinkle in a pinch of salt and a dash of pepper to awaken the flavors.
  • Simmer the vegetables until tender yet slightly firm for 5 to 8 minutes. Then, increase heat, add chicken, and stir in cheese pieces.
  • Once the cheese is melted, take it off the heat and mix in the spinach. Gently pour in the cream while stirring. Taste and add seasonings as desired. Serve in bowls and top with fresh parsley.
