Creamy Boursin chicken orzo bake: Easy one-pot meal ready in just an hour for busy nights.
Ingredients:
  • 1.5 pound boneless skinless chicken breasts
  • 2 teaspoon cantanzaro herbs
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 medium shallot, minced
  • 6 cloves garlic, minced
  • 2 cups orzo
  • 2 cups chicken broth
  • 1 3/4 cup milk
  • 1/4 cup whipping cream
  • 1/3 cup sun dried tomatoes, julienne style
  • 1 package Boursin cheese
  • 2 cups spinach, chopped
Instructions:
  • Preheat the oven to 400°F (200°C), then generously season both sides of the chicken breasts with Cantanzaro herbs and salt.
  • In a deep cast iron skillet or Dutch oven, heat olive oil and butter over medium-high heat until shimmering. Lay chicken in a single layer and sear until golden brown on each side for about 3 minutes. Transfer to a plate to keep warm.
  • In the skillet with the shallot and garlic, cook for 30 seconds until fragrant. Add the orzo and toss to evenly coat in the oil.
  • Combine chicken broth, milk, and whipping cream in the skillet, then mix in sun-dried tomatoes. Place the Boursin cheese wheel in the center of the orzo mixture. Return the chicken to the skillet and cover.
  • Bake until the orzo is al dente, the chicken is fully cooked through, and the juices run clear, about 40 minutes. Use an instant-read thermometer; the chicken should register at least 165°F (74°C).
  • Set chicken aside and introduce fresh spinach to the pan. Stir consistently until the spinach wilts, approximately 1 minute. Serve promptly.
