Creamy Boursin sauce enhances succulent chicken thighs for a simple, flavorful weeknight meal.
Ingredients:
  • 2 pounds boneless, skinless chicken thighs
  • salt and freshly ground black pepper to taste
  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • 0.33 cup thinly sliced shallots
  • 1.5 cups heavy cream
  • 1 (5.2 ounce) package shallot and chive cheese spread (such as Boursin®)
  • chopped fresh chives
Instructions:
  • Dry chicken thighs gently with paper towels, then generously season with salt and pepper.
  • In a large nonstick skillet, melt butter with oil until sizzling. Add seasoned chicken thighs and sear until beautifully browned, approximately 5 minutes.
  • Flip the chicken and cook for an additional 2 minutes.
  • Generously spread the sliced shallots on top of the chicken thighs, then cover the pan and simmer over low heat. Cook until the thighs reach an internal temperature of 165°F (74°C), around 8 to 9 minutes more.
  • Transfer the chicken to a plate or serving platter to keep it warm.
  • Combine cream with the pan drippings, then mix in Boursin by breaking it into pieces. Increase heat to medium and stir until the cheese is melted and the sauce is bubbly, approximately 5 minutes.
  • Top the succulent cooked chicken thighs with the luscious sauce and sprinkle with snipped chives for a touch of freshness. Serve while still warm for a delightful meal.
