Impress guests with creamy Boursin mashed potatoes in no time. Try different Boursin flavors like black truffle for extra flair.
Ingredients:
  • 2 pounds russet potatoes, peeled and cut into 1 1/2-inch chunks
  • 1/3 cup half-and-half, or as needed, warmed
  • 1/4 cup butter, melted
  • 1 (5.2-ounce) package soft French cheese, such as Boursin® Garlic and Fine Herbs Cheese, roughly chopped
  • salt and pepper, to taste
  • 2 tablespoons minced fresh chives
Instructions:
  • In a large pot, generously cover potatoes with water and season with a pinch of salt. Cover with a lid and bring to a boil until potatoes are tender when pierced with a knife, for about 15 minutes. Drain potatoes and return them to the pot; briefly heat over low to remove any excess water.
  • Mix in half-and-half, butter, and Boursin® cheese, mashing with a potato masher until reaching your preferred consistency. If the potatoes are too thick, incorporate extra half-and-half, 1 tablespoon at a time. Season with salt and pepper to taste, and finish with a sprinkle of chives before serving.
