Braised leeks with thyme

Cozy and nostalgic side dish that satisfies.
Ingredients:
  • 3 small leeks, trimmed, washed
  • 25g butter
  • 2 garlic cloves, thinly sliced
  • 2 sprigs fresh thyme
  • 2 fresh bay leaves (see tip)
  • 255.00 gm chicken style liquid stock
  • Finely chopped fresh flat-leaf parsley leaves, to serve
Instructions:
  • Prepare leeks by discarding outer leaves and cutting into 5cm pieces. In a saucepan over medium heat, melt butter and add garlic, thyme, and bay leaves. Stir and cook for 1 minute until fragrant.
  • Combine the leek and stock in a pot and bring to a boil. Lower the heat to medium-low and simmer covered for 25 minutes until the leeks are almost tender. Uncover and simmer for an additional 10 minutes or until the liquid has reduced. Season with pepper, garnish with parsley, and serve.
