Delicious oxtail stew cooked in a rich red wine broth with veggies - a guaranteed crowd-pleaser!
Ingredients:
  • 3 pounds beef oxtail
  • 3 medium carrots, diced
  • 2 stalks celery, diced
  • 1 large onion, diced
  • 4 cloves garlic, chopped
  • 2 teaspoons chili powder
  • 1 teaspoon ground black pepper
  • 4 cups beef stock
  • 1 cup dry red wine
  • 3 tablespoons all-purpose flour
  • 3 bay leaves
  • 1 cup sliced fresh mushrooms
Instructions:
  • Heat your oven to 325°F (165°C).
  • In a sizzling cast iron casserole dish, sear oxtail in hot oil until golden on all sides, approximately 10 minutes. Place the beautifully browned oxtail on a plate.
  • Sauté carrots, celery, onion, garlic, chili powder, and pepper in the casserole until veggies are tender, around 5 minutes. Return oxtail to the pot, pour in beef stock and red wine, then bring to a boil.
  • Add the flour and simmer until the sauce thickens, approximately 3 minutes. Introduce bay leaves into the sauce and ensure they are immersed. Lastly, add the mushrooms.
  • Bake in the preheated oven until the meat is tender and falls off the bone, approximately 2 hours. Serve directly from the casserole dish for a rustic presentation.
