Asian-inspired oxtail dinner recipe.
Ingredients:
  • 1.5kg oxtail pieces, excess fat trimmed
  • 125ml shao hsing wine
  • 80ml soy sauce
  • 4 garlic cloves, bruised
  • Rind from 1/2 an orange
  • 2 whole star anise
  • 1 cinnamon stick
  • 60ml peanut oil
  • 1L (4 cups) chicken style liquid stock
  • 60ml soy sauce
  • 80g yellow rock sugar
  • 20g fresh ginger, thinly sliced
  • 4 baby bok choy, halved lengthways
  • Steamed white rice, to serve
Instructions:
  • Mix together oxtail, wine, dark soy sauce, garlic, orange rind, star anise, and cinnamon in a bowl. Transfer to a shallow dish, cover, and refrigerate overnight, flipping occasionally to marinate.
  • Take the oxtail out of the marinade and let it reach room temperature while keeping the marinade aside. Heat oil in a wok over high heat. Sear oxtail for about 5 minutes until browned, stirring occasionally. Place the oxtail in a flameproof clay pot or casserole dish, discard the oil, and pour the reserved marinade over the oxtail.
  • In a jug, mix stock, light soy sauce, sugar, and ginger. Pour this flavorful mixture over the oxtail. Bring to a boil over high heat. Reduce heat to low, cover, and simmer for 2 hours until the oxtail is tender.
  • Place baby bok choy in a bamboo steamer over boiling water in a wok. Cover and cook for 3-4 minutes until vibrant green and perfectly crisp-tender.
  • Place oxtail pieces and bok choy in serving dishes. Remove excess fat from the braising liquid. Drizzle braising juices over oxtail and serve hot with steamed rice.
