Braised Turkey Legs

Savory turkey leg stew with braised roots vegetables.
Ingredients:
  • 2 turkey legs and 2 thighs, about 4 lbs
  • 1 tablespoon extra virgin olive oil
  • 1 cup yellow onion, finely chopped
  • 1 cup celery, finely chopped
  • Salt, pepper, and cayenne
  • 2 cups water or other braising liquid (dry white wine or stock )
  • Cornstarch
  • Parsley, chopped, about 1/4 cup
  • Optional 3 cups chopped or quartered potatoes, carrots, turnips, rutabagas, and/or parsnips
Instructions:
  • Season turkey thighs and legs with salt and pepper. In a large sauté pan with high sides, heat olive oil over medium-high heat. Sear turkey until golden brown on all sides, approximately 5-8 minutes.
  • Create a flavorful bed with chopped onion and celery under the turkey pieces and sauté for an extra 5 minutes.
  • Simmer turkey in 2 cups of flavorful braising liquid, such as water, stock, or wine. Cover and cook on low heat for 1.5 hours until the meat is tender and falling off the bone.
  • Carefully separate the turkey meat from the pan, ensuring all bones are removed, especially the small narrow ones from the legs. Discard the skin.
  • Add the potatoes and root vegetables to the pan with the flavorful turkey braising liquid. Season with salt and pepper, then bring to a lively simmer over medium-high heat. Reduce the heat, cover, and cook for about 20 minutes until tender. Once done, remove the vegetables to thicken the liquid into a delicious sauce.
  • Prepare the sauce: Turn up the heat and let the liquid in the pot boil. Simmer until it reduces by half to enhance the meaty flavors. Mix 1 teaspoon of cornstarch with 1/2 cup of water. Gradually pour the cornstarch mixture into the sauce while stirring until the desired thickness is reached. Season with salt, pepper, and a dash of cayenne or Tabasco for some kick. Balance the sweetness with vinegar or lemon juice. Sprinkle in some fresh parsley for a pop of color.
  • Return the turkey and vegetables to the pan, coating them with the sauce. Serve over rice, bread, or alongside the vegetables if desired. Enjoy the dish and please share your feedback!
