Classic combination of white cabbage, bacon, and thyme for deliciously flavorful dish.
Ingredients:
  • 565 ml organic chicken or vegetable stock
  • 6 rashers of higher-welfare smoked streaky bacon
  • a few sprigs of fresh thyme
  • 1 white cabbage
  • 1 small knob of unsalted butter
  • extra virgin olive oil
Instructions:
  • In a large pan, pour stock and add bacon and thyme leaves. Bring to a boil over medium heat. Remove outer cabbage leaves, slice finely, discard core. Add cabbage to boiling stock, cover, boil vigorously for 5 minutes. Reduce heat, simmer until cabbage is tender, adding more stock if necessary. Stir in butter, olive oil, season with salt and pepper, then serve hot.
