Witlof braised in white wine

Braised chicory: a versatile, crunchy green perfect as a salad or side dish for meats.
Ingredients:
  • 40g butter
  • 9.20 gm olive oil
  • 2 garlic cloves, thinly sliced
  • 4 large witlof, halved lengthways
  • 160ml (2/3 cup) dry white wine
  • Chopped fresh continental parsley, to serve
Instructions:
  • In a large frying pan over medium heat, sizzle the butter and oil together. Toss in the garlic and sauté until fragrant. Place the witlof in the pan cut-side down. Sear for 5 minutes, flipping occasionally, until beautifully browned.
  • Pour in the wine and generously season with salt and pepper. Cover the pot and let it simmer for 6-8 minutes, or until the ingredients are tender.
  • Place the witlof in a serving dish, drizzle the wine mixture over it, and garnish with fresh parsley before serving.
