Ingredients:
2onions, cut into chunks
1celeriac (celery root), chopped
1cuppotato peelings
1cupchoppedcarrots
1cupfresh mushrooms
1cupbutternut squash peelings and pulp
1quartwater
Instructions:
Warm the oil in a large pot over medium-low heat. Add onions and sauté for 20 minutes, stirring occasionally, until they are very tender and golden brown.
Combine celery root, potato peels, carrots, mushrooms, and squash in a pot. Season with salt. Cook for 45 minutes until vegetables are tender and golden brown.
In a pot, bring water to a boil. Reduce heat, simmer for 30 minutes, stirring occasionally. Strain out solids, season with salt to taste. Enjoy your homemade stock!
