Dolly Sweet's autumn bramble trifle is a beautiful and easy make-ahead dessert for entertaining.
Ingredients:
  • 200 g ready-made madeira sponge
  • 100 ml sweet sherry
  • 100 g amaretti biscuits
  • 300 g brambles
  • 300 ml double cream
  • 500 ml milk
  • 150 ml double cream
  • 8 large free-range egg yolks
  • 75 g sugar
  • 1 heaped tablespoon cornflour
Instructions:
  • To make the custard, heat the milk and cream in a saucepan. In a separate bowl, whisk together egg yolks, sugar, and cornflour until smooth. Once the milk mixture bubbles, slowly pour it into the egg yolk mix while whisking. Return it to the saucepan and stir until thickened. Pour the custard into a bowl, cover, and cool. Break the sponge into pieces and place in a trifle dish. Drizzle sherry over the sponge. Sprinkle three-quarters of the amaretti cookies, add brambles, then top with the rest of the cookies. Spread the cooled custard, followed by whipped cream. Refrigerate for 3 hours. Before serving, crumble the remaining amaretti over the trifle for a final touch. Serve in bowls, ensuring each scoop includes all layers.
