Brandy Crème Brûlée Bars

Decadent and creamy mini Crème Brûlée bars, a must-have for dessert lovers.
Ingredients:
  • 1 cup Gold Medal™ all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup butter or margarine, softened
  • 5 egg yolks
  • 1/4 cup sugar
  • 1 1/4 cups whipping (heavy) cream
  • 1 tablespoon plus 1 teaspoon brandy or 1 1/2 teaspoons brandy extract
  • 1/3 cup sugar
Instructions:
  • Preheat the oven to 350°F. Combine flour, 1/2 cup sugar, and butter in a medium bowl until well mixed. Press the mixture onto the bottom and 1/2 inch up the sides of an ungreased square pan measuring 9x9x2 inches. Bake for 20 minutes.
  • Lower the oven temperature to 300°F. In a small bowl, whisk together egg yolks and 1/4 cup sugar until thick. Slowly mix in whipping cream and brandy until combined. Pour the mixture over the baked layer.
  • Bake for 40 to 50 minutes until the custard is fully set and a knife inserted in the center comes out clean. Allow it to cool completely for about an hour. Then, cut into 6 rows by 6 rows to make bars and place them on a cookie sheet lined with waxed paper.
  • In a sturdy 1-quart saucepan, melt 1/3 cup sugar over medium heat until it turns into a caramel color. Let it cool slightly until it thickens, then drizzle the warm caramel over the bars. If it becomes too thick, gently heat it again until it's easy to drizzle. Once the caramel sets on the bars, refrigerate them covered for up to 48 hours.
