Brandy Flamed Peppercorn Steak

Succulent peppercorn steak seared in butter, garlic, wine, and brandy, then finished with a luscious cream sauce for a truly exquisite meal.
Ingredients:
  • 3 tablespoons crushed black peppercorns
  • 2 (8 ounce) beef top sirloin steaks
  • 1 tablespoon lemon pepper
  • 5 tablespoons butter
  • 0.5 cup red wine
  • 3 tablespoons brandy
  • 0.25 cup chopped green onions
  • 1 shallot, chopped
  • 0.5 cup heavy cream
  • 1 teaspoon white sugar
Instructions:
  • Coat both sides of each steak with crushed peppercorns, then season with lemon pepper and salt.
  • In a large skillet over medium-high heat, melt the butter until bubbling. Add garlic and wine, cook for 1 minute. Place steaks in the pan, cooking each side to your liking, about 5 minutes per side. Lower the heat to low.
  • Flambé the steaks by pouring brandy and igniting it. Allow flames to extinguish. Garnish with green onion and shallot, then pour cream around the steaks. Cook until sauce is hot. Plate the steaks and finish the sauce by stirring in sugar, then generously spoon over the meat.
