Ingredients:
  • 1.5 cups white sugar
  • 1 cup cornmeal
  • 2 eggs
  • 1 cup milk, at room temperature
  • 0.25 cup melted butter
Instructions:
  • Combine sugar, cornmeal, flour, and salt in a bowl, then mix well before adding eggs.
  • Combine milk and melted butter in a bowl, stirring until smooth. Mix into the cornmeal mixture until smooth, about 5 minutes.
  • Prepare the griddle by greasing it lightly and heating it over high heat. Spoon out tablespoonfuls of the cornmeal mixture onto the griddle. Cook until both sides are golden brown, about 5 minutes per side.
